Abstract

PURPOSE: To prepare sakes with a high alkalinity, having unique body of seaweed constituents, and fruit wine-like flavor, by fermenting a mixture of scaweed extract, sugars, and minor nutrients with yeast.
CONSTITUTION: An extract of seaweed constituents, e.g. inorganic constituents, such as calcium, potassium, or iodine, and various polysaccharides, from seaweeds, e.g. wakame or sea tangles, is incorporated with sugars and minor nutrients, e.g. vitamin or amino acids, and fermented with yeast, e.g. refined sake or wine yeast. At almost the completion of fermentation, sugars are added, and the fermented liquid is transferred to the cold, aged, and stored. Alternatively, the further fermented extract is stored, and aged in the cold.
