Abstract

PURPOSE: To obtain the title material having improved instantness and texture, by extruding and gelatinizing raw rice watered and immersed under heating without rapid change in pressure, and by processing the cooled and dried rice to leave a half or more of the aged surfaces.
CONSTITUTION: Raw rice consisting of rice, and if necessary 30% or more of other various starches, e.g. potato starch, is watered and immersed to give a moisture content of 30W40%. The rice is then extruded from an extruder at 100W120°C without rapid change in pressure and gelatinized. The resulting rice is cooled and dried at 100°C or below to give the moisture content of 20% or below, preferably 5W15%. The dried rice is cut or crushed to give the desired material for instant food, having 50% or more of the aged surfaces left.
