Abstract
PURPOSE: To prepare potted "chawanmushi" (a pot-steamed egg custard with assorted ingredients) with can be stored for a long time without lowering the taste and quality, by thermally sterilizing the raw materials of "chawanmushi" separately, and sealing the raw materials in a pot.
CONSTITUTION: Each of the raw materials of "chawanmushi", e.g. meat, ginkgo nuts, shiitake mushrooms, boiled fish paste, etc. is separately sterilized by heating at a temperature suitable for the material. The sterilized raw materials are put into a bottle made of heat-resistant glass, together with a seasoning liquid prepared from eggs, soy sauce, sugar, seasonings, and broth. After sealing the bottle, the content is further sterilized by heating at a high temperature for a proper time interval.
