Abstract

PURPOSE: To obtain kusaya with good taste, by drying a raw material fish impregnated with kusaya extract, baking it, soaking it in sake, providing it with sake ingredient so that sweetening degree is increased, fastening the meat.
CONSTITUTION: A raw fish, e.g., mackerel scad, horse mackerel, flying fish, etc. is processed to a fish with its ventral side open, and it is soaked in a kusaya solution so that it is impregnated with kusaya extract. The kusaya solution is a blend of salt soup, internal organs of fish, and chracoal. The fish is dried by sun-drying, artificial drying, and the surface and back of the fish are baked. The baked fish is soaked in sake while it is hot so that is is impregnated with sake ingredient, to give the desired kusaya.
