Abstract

PURPOSE: To prepare an easily servable potato salad packed in a casing, having excellent preservability, by packing raw potatoes together with heat-resistant mayonnaise and other salad ingredients in a plastic casing, and sterilizing the content at high temperature.
CONSTITUTION: Raw potatoes are peeled, cut into small cubes of 5W20mm square, and immediately immersed in a 0.05W0.1wt% solution of a hydroxycarboxylic acid such as citric acid, malic acid, etc. or in a 1W2.5wt% saline water. After draining, they are mixed rapidly with a heat-resistant mayoonaise and other salad ingredients under vaccum, adjusted to pH≤4.7 by adding an organic acid such as citric acid, and filled in a plastic casing with continuous packer sealer. The filled casing is heat- sterilized in a retort at 100W130°C for 20W40min.
