Abstract
PURPOSE: A paprika pigment preparation for a drink, suitable for imparting a stable and improved red color to the drink without adding an oil for adjusting the specific gravity, and prepared by adjusting the paprika content in an emulsion and the particle size of the emulsified particle to specific ranges.
CONSTITUTION: A paprika preparation consisting of about 0.1W5wt%, based on the weight of the aqueous system, purified paprika pigment in the aqueous system containing a protective colloid substance, e.g. acacia, dextrin or gelatin and/or a surfactant, e.g. sugar ester of a fatty acid or sorbit an ester of a fatty acid. The maximum particle size of emulsified particles in the emulsion is about 1.5μ or less, and the average particle size is about 0.3W0.7μ.
