Abstract
PURPOSE: To prevent the generation of undissolved lump of egg white powder in water, or to facilitate the dissolution of the undissolved lump if any easily by stirring, by adding a surface active agent before or after the preparation of egg white powder by the drying of liquid egg white.
CONSTITUTION: Saccharides and mucous substances are removed from liquid egg white, and the liquid is dried with a pan-type drying process to obtain flaky egg white. Before or after the pulverization of the flake to powdery egg white, a surface active agent is added to the dried egg white.
