Abstract
PURPOSE: To obtain a rice bean-jam cake usable for a food in a cold state, by kneading glutinous rice flour or glutinous rice starch with gluten and surfactant, adding sugar to the kenaded material, boiling the mixture, and cooling the boiled mixture.
CONSTITUTION: A mixture of glutinous rice flour with active aluten and sucrose ester of a fatty acid is kneaded with water, and sugar is added to the mixture. The resultant mixture is further kneaded, boiled for 20min, cooled and frozen. The resultant product may be stuffed with a bean jam in the form of a bun with the bean-jam filling or inserted in an ice cream, etc.
