Abstract

PURPOSE: Freeze-dried Bacillus natto or its spores are inoculated in boiled soybeans to produce NATTO (fermented soybeans) showing improved threading and smell.
CONSTITUTION: Freeze-dried Bacillus natto or its spores are inoculated in boiled soybeans. The freeze-dried strain is provided by dispersing Bacillus natto separated from commercially available strain or a fresh strain obtained by cultivation of commercially available strain or the aboved separated strain in water or a salin then effecting freeze-drying. The culture medium for the cultivation of Bacillus natto may be any liquid or agar medium containing carbon source and inorganic salts, however, preferably boulillon medium, SOYTON medium (SOYTON is a hydrolyzate of soybean protein made by Difco Co.) or yeast-pepton medium is employed. The threading property of NATTO depends on the remaining ratio of strains showing threading property and the culture medium is desirably selected according to the objective threading properties.
