Abstract

PURPOSE: To prepare a peach juice, containing fibers, and having a natural refreshing feeling, by crushing a peeled and cored peach, and incorporating small fragments obtained by cutting the flesh before or after the crushing in the resultant pressed juice.
CONSTITUTION: An epicarp of a peach is peeled, and the seed thereof is then cored. A soft flesh is directly crushed by press rolls, etc. at a pressure of about 50kg/cm2, and a peach of hard flesh is softened by heating and then crushed. The flesh after the pressing is cut to such a size as not to care thereabout in drinking. The fragments of the pressed flesh are mixed with the pressed juice, and if necessary water, a sweetening agent, sour agent, perfume, etc. are added and mixed therewith.
