Abstract
PURPOSE: To prepare a food having novel taste, by dissolving a stabilizer, e.g., carrageenan, locust bean gum, etc. in water, adding fruit juice to the solution, followed by freezing and dissolution.
CONSTITUTION: Carrageenan, locust bean gum, pectin, agar, gelatin, etc. as stabilizers, are used alone or in the form of a mixture. The stabilizers, a sweetening agent, etc. are dissolved in water under mixing and heating and sterilized. 30W 90wt% fruit juice ingredient is added to the solution, which is cooled and packed into a container. The liquid matter is cooled to ≤-10°C so that it is frozen completely, and it is thawed naturally or under heating, to give a product.
