Abstract

PURPOSE:To prepare a peanut jam having a rich flavor and improved keeping quality, by dipping peanuts with the pellicle thereon in an aqueous sodium bicarbonate, boiling the peanuts in the dipping aqueous sodium bicarbonate, grinding the boiled peanuts to give a jam-like material, boiling and kneading the resultant material with a seasoning, and kneading the kneaded material with a pasty peanut. 加によって落花生の風味が充分に得られ、しかも無添加
で保存性に優れた船が提供できる。

液の含浸作用、加熱温度を段階的上昇する煮熟作用及び
煮熟された落花生の破砕、擦りつぶし作用の相乗作用に
より適宜の粘度と黒褐色を有し、しかも落花生特有の風
味を充分に有した鮎が製造できる。また、かくして得ら
れft、#花牛鍋の保存性をテストした結果次の如くで
あった。
