。Detailed Description of the Invention The present invention uses L-asparatyl-L-phenylalanine methyl ester (hereinafter referred to as APM), reduced starch decomposition products and/or reduced maltose syrup, and sugar alcohols, calcium carbonate, and talc as sweeteners. The present invention relates to a chewing gum using a chewing gum base containing microcrystalline cellulose powder instead, and a method for manufacturing the same.

The above-mentioned sugars are high in calories and have the disadvantage of leading to excessive calorie intake.

For example, chewing gum that uses glycerin instead of starch syrup has poor flexibility and spreadability, and has the drawback of being excessively hard to the touch when chewed.

。On the other hand, APM is a sweetener that has a sweetness level 180 to 200 times higher than sucrose, is low in calories, and has low cariogenicity, and attempts have been made to use it in chewing gum. However, in this case, unless sugar, glucose, or starch syrup was used in combination, satisfactory chewing gum properties such as flexibility, spreadability, and feel when chewing could not be obtained.

Succeeded in developing chewing gum that does not have to be.

良い。The sweetener used in the present invention is characterized by a combination of APM, reduced starch decomposition product and/or reduced maltose starch syrup, and if necessary, an appropriate amount of vegetable gum. In the production of chewing gum, both are dissolved in water, dried, and crushed to produce a sweetener that encapsulates APM.
Chewing gum can be produced by kneading sugar alcohols such as mannitol and/or sorbitol, calcium carbonate, and chewing gum bases containing microcrystalline cellulose in place of talc, as well as other chewing gum ingredients. Other chewing gum ingredients include fragrance,
There are emulsifiers and the like, and these can be conventionally used materials.

However, since the decomposition of APM is promoted by the calcium carbonate and Merck contained in the chewing gum base, APM in chewing gum products has the disadvantage of lacking long-term stability. In order to eliminate this adverse effect on APM, the present invention has achieved long-term stability of APM by incorporating microcrystalline cellulose powder in place of calcium carbonate in the chewing gum base.

The microcrystalline cellulose powder may be commercially available, and has a particle size of 10 to 100 microns, preferably 40 microns.
An average particle size of ~80 microns is used.

The mixture is mixed in a ratio of ~85:90~15, dissolved in water, dried, and pulverized to obtain an encapsulated APM sweetener raw material. The water used is, for example, 28% water to shorten the dissolution time.
-40C hot water is preferred. Use of excessively high temperatures is undesirable because it involves decomposition of APM. The resulting solution is homogenized if necessary, then spray-dried, freeze-dried,
Drying is carried out by a conventional method such as vacuum drying. Similarly, pulverization can be carried out by a conventional method, and the particle size can be reduced to about 100 to 150 mesh, which is commonly used as a sweetener for chewing gum.

The amount of sweetener added in the present invention is 40 to 90% by weight, preferably 50 to 80% by weight, based on the total weight of the chewing gum composition.

大きな特徴である。In the present invention, a part of the sweetener can be replaced with reduced starch decomposition product powder and/or reduced maltose starch syrup powder. Reduced starch decomposition products and reduced maltose starch syrup are low in calories (less than 60% of sucrose), and have a sweetness level of 80 to 80% that of sucrose.
Although it is a little low at 10%, it is tasteless and odorless and does not adversely affect the flavor of chewing gum. On the other hand, vegetable gums are not sweet and have almost no calories. Another major feature of these substances is that they do not generate organic acids due to the action of bacteria in the oral cavity, and do not cause cavities.

、これら物質は香料の安定性を高める作用を持つ。Since the sweetener of the present invention has APM dispersed in advance in the reduced starch decomposition product and/or reduced maltose starch syrup and/or vegetable gum having the above-mentioned characteristics, the APM is stably retained for a long period of time and can be stored on the shelf of chewing gum. Because it has a long life and the solubility of APM is appropriately regulated, the sweetness of chewing gum lasts for a long time. Additionally, these substances have the effect of increasing the stability of fragrances.

。First, sugar alcohols such as sorbitol and mannitol and reduced starch decomposition products and/or reduced maltose starch syrup powder are added as needed to a conventional chewing gum base containing microcrystalline cellulose instead of calcium carbonate and talc. Knead uniformly at a temperature of 40-6DC, then add emulsifier, glycerin, lecithin 5 colorant, and finally add encapsulated APM sweetener and flavor, knead uniformly. to obtain chewing gum. The chewing gum thus produced is rolled, molded and packaged by conventional methods.
