【考案の詳細な説明】 本考案は製餡工程における小豆などを煮熟するための豆
類煮釜に開−煮熟操作の終了した豆類中に煮熟不足部分
が生じることからくる煮えむらの発生を確実に解消でき
る一方、豆類の煮熟過度からくる餡の糊化などの弊害も
同時に効果的に防止できるものに係る。

行った場合に、内釜の中心底部が熱水の循環路から外れ
勝ちとなって内釜の中心底部の存在する豆類の煮上りに
遅れが生じ、ために豆類全体として見れば煮えむらが生
じ勝ちとなり、また内釜の中心底部の豆類までも充分煮
上げるように煮上げ時間を延長しようとすると全体の豆
類が煮熟過剰となって餡の糊化とか餡細胞の破壊などの
餡の品質上好ましくない結果が生じ勝ちとなる。

状の煮釜本体1内にその長子軸を鉛直方向に一致させつ
つ設置する一方、内釜2の側壁の下縁近くで且つ煮釜本
体1側壁と内釜2側壁の間に上部に多数の水蒸気噴出細
孔9を穿設した平面リング状の主加熱管3を設けること
によって、その水蒸気噴出細孔9から水蒸気を噴出させ
て煮釜本体1内の略一杯に収納された水7のその内釜2
側壁と煮釜本体1側壁間に存在する部分を加熱沸騰させ
て底比重化しご第1図の矢印で示すように熱水をして内
釜2の上縁を越えて内釜2内へ移動させたうえその内釜
2内を下って底部の網体5下方へ出て来た水を再び加熱
して再度内釜側方を上昇させるといった熱水循環を生じ
させるようにした豆類煮釜において、該網体5の直下に
同様に上部に多数の水蒸気噴出細孔10を穿設した平面
で二重リング状の補助加熱管4を設けることによって、
煮釜本体内の水7の加熱開始時にその昇温を迅速化し、
前述の熱水循環時におけるその熱水循環を妨げない程度
に少しづつ水蒸気を噴出させて内釜底部位の水の温度を
可及的に高く維持し且つ時として強く水蒸気を噴出させ
て内釜底部位の豆類間の目詰りを解消させ、その部位の
熱水の通過を円滑化させるようする一方で、該網体5の
中心膜低部直下、即ち内釜2中心底部にある煮豆落し口
11の直下に自動調節弁12付きの二本の蒸気細管6を
設けると共にその蒸気細管6からは、所定の豆類の煮上
げ操作が終了して主加熱管3及び補助加熱管4からの水
蒸気噴出が停止すると同時に自動調節弁12が開いて水
蒸気の細流を該網体5の中心最底部直下に数分乃至数十
分といった一定短時間噴出させ、それによって該網体5
の中心膜底部位にある煮え遅れた豆類の煮熟を完了させ
るようにしたものである。

低部位の直下に水蒸気の細流を噴出させ、その網体の中
心最低部位にある豆類のみについてその一定短時間、加
熱操作を追加断続することによって、主加熱管3による
煮上げ操作時には熱湯循環の通路から外れ勝ちとなって
煮え遅れ気味にあるその網体の中心膜底部位の豆類の煮
熟度を内釜内の他の部位の豆類と同程度にまで向上させ
るものである。
