きに層流状のあん汁の流れを上流へ押し戻して撹
乱するように晒用水流ノズルを設け、このノズル
からの噴出水流によつてあん汁と晒用水とを混合
させて、あん汁からの不純物の溶出すなわちあん

ん汁の渦流を促すための多数の噴水ノズルを設け

方は排水口3となつており、この排水口はバルブ

下部には内周壁の接線方向にあん汁供給口となる
あん汁供給パイプ5が取り付けてある。また晒し
タンク1の上部側壁にはあん汁排出口である排出
パイプ6が水平方向に突設してある。さらに晒し
タンク1内の軸心部には給水パイプ7が通つてお
り、この給水パイブの下部7aはS字状に屈曲し
てタンク底部下方に延伸している。給水パイプ7
の外周面には等間隔を置いて10個(図面では7個
のみ図示)の噴水ノズル7b1,7b2,7b3,7
b4,7b5,7b6,7b7が突設してある。最下部に
位置しているノズル7b1の噴射口はフイルター部
2の砂その他の沈澱物を撹拌しないように上向き
となつている。中間のノズル7b2〜7b6の噴射口
は横向きであり、最上部に位置するノズル7b7の

晒らされ、やがてあん汁は水と共に排出口6を出
て、水切機へ流入する。所定量のあん汁のさらし
作業を終えた段階でバルブ4を開いて沈澱物など
