製品となり、而も煮熟水の対流衝撃等により原料
魚の表面組織が崩壊してバチヤバチヤになり、後
の乾燥工程を困難ならしめたり外観上製品価値を
下落せしめたりする等の欠点を有していた。

乾燥工程間に網状のコンベアを介在せしめ、該コ
ンベアの行程中に水切り装置と濃塩水を散布せし
めるシヤワーを順次設けしめ、シヤワーの後方部
においてコンベアの上下近接位置に多数の放熱管
を形成せしめて該放熱管とコンベアをトンネル状
に包囲する加熱室を形成せしめて成る小魚類の連
続蒸し器及び原料魚の洗浄工程と乾燥工程間に網
状のコンベアを介在せしめ、該コンベアが所定濃
度の塩水を収容すると共に塩水の加熱装置を有せ
しめた塩水槽の水面僅か下方を通過する様に成し
た小魚類の連続蒸し器を提供して上記欠点を解消
せんとしたものにして、以下本発明の一実施例を
図面に基づいて説明すると、 1は回転体2,2′間に無端状に懸架せしめた
所定幅(例えば1m)のコンベアであり、該コン
ベア1は小魚類が脱落しない程度のメツシユを以
つてステンレス等の不錆性材料より網状に形成せ
しめている。而してコンベア1の後端方部にはロ
ーラー3,3′を介して撹拌水を収容せしめた撹
拌槽4へ傾斜状に没入せしめている。5は撹拌槽
4に収容せしめた撹拌水を撹拌作用せしめる撹拌
シヤワーであり、又6は撹拌槽4に隣接形成せし
め、小魚類を貯留してこれをコンベア(図示せ
ず)等により順次撹拌槽4に供給せしめる洗浄槽
である。

蓋せしめたカバー体、24,24′,24″,24
は夫々コンベア1を所定方向へ導くローラーで
ある。

魚は水切りされた後シヤワー15による濃塩水の
散布を受ける為、濃塩水の希釈化が防止されると
共に原料魚に対する濃塩水の付着性を向上出来、
更に原料魚に付着した濃塩水中の水分が蒸発され
て加熱室7に充満する為かかる熱蒸気にて原料魚
を蒸し上げ状に加熱出来ると共に一層濃縮された
濃塩水の原料魚内部への浸透を促進出来、従つて
原料魚は何等塩水煮熟によることなく良好なる加
塩、加熱効果を受けて加熱による殺菌と魚肉蛋白
の変性、食塩の浸透による貯蔵性の獲得と調味等
の目的を達することが出来、而も蒸気加熱による
ため原料魚の旨味、栄養分の溶出、表面組織の崩
壊等を防止出来、従つて次工程における原料魚の
乾燥を著しく容易迅速ならしめ、而も原料魚の加
熱はトンネル状の加熱室7にて行わしめる為極め
て熱効率が良く、又原料魚に付着した濃塩水中の
水分を単に蒸発するだけの熱量にて十分加熱を完
了するので塩水煮熟のものに比し極めて少量の用
水、熱量で済むのである。
