Abstract

PURPOSE:Root stems of 'WAKAME' sea weed are used as a starting material to obtain a 'WAKAME' drink which has better smell and taste than conventional sea weed drink and a suitable viscosity. CONSTITUTION:The drink is obtained by cutting or grinding root stems of 'WAKAME' into fine strips or powder and combining the strips or powder with a variety of flavors. 添加すると、ワカメ特有の生臭みが緩和され、よυ飲み
易い味、風味のワカメ飲料が得られる。この場合、アス
パルテームの添加量は甘味料として単独使用で飲用濃度
0.02〜0.06 f/dl程度が好ましい。

た10名の官能評価・臂ネルによシ官能評価を行った。

原料とする飲料に対し、表3の配合で、アスパルテーム
(味の累C株>H−4ルスイート1/60)又は砂糖を
添加溶解した。
