Abstract

PURPOSE:To obtain the titled sea tangle to be readily handled and transported and to be preserved for a log period, by immersing sea tangle in cold water, punching the sea tangle with a blade mold formed into a shape to give the shaped sea tangle and drying into a fixed water content. CONSTITUTION:Sea tangle 8 free from scratch on the surface is immersed in cold water for 8-10hr. Then the sea tangle 8 is placed on a blade mold 6 formed into a pattern on an operation stand 7 and the sea tangle 8 is punched under pressure into a shape. Then the punched sea tangle is dried in the sun or in a drying chamber at 25-30 deg.C under a constant temperature state until water content becomes 15-20% to give the aimed sea tangle. The cold water preferably contains copper ion and 1-3wt.% salt and preferably the pressure is uniformly applied to the whole area of the sea tangle.

[Detailed Description of the Invention] (Industrial Application Field) The present invention relates to dashi kelp that is added to soups and simmered dishes, and in particular, it is formed into dashi kelp with congratulatory letters and patterns, and then added to soups and simmered dishes as appropriate for cooking. This article relates to a patterned soup stock kelp and a method for producing the same.

(Conventional technology) Dashi kelp has been widely used as an ingredient for the soup stock that is the basis of cooking, but most of the kelp is dried and simply cut into appropriate size pieces and placed in a pot. They simply made kelp dashi by adding it to the water and boiling it.

Recently, there has been a tendency to slightly process it and grind it into a powder to make it easier to store and handle, but its role is still behind the scenes of cooking and is removed as unnecessary when serving food. This is common.

(Problems to be solved by the invention) As mentioned above, the reason why kelp is used as soup stock is not to target the entire kelp material, but only the surface of the kelp or the intangible extract contained within the kelp. Most of the kelp was simply taken out and used, and the majority of the kelp was simply thrown away without being of any use.

That is, in the present invention, water containing copper ions and 1 to 3% salt is prepared, and kelp is soaked in the water for 8 to 10 hours. After that, it is placed on a blade mold formed into a pattern to create a punched-shaped kelp. Then, this is dried at a temperature of 25 to 30 degrees Celsius until the moisture content is 15 to 20%. It's in dashi kelp.

This is because if there are any scratches left on the finished patterned soup kelp, the scratches will stand out as white, which will detract from the product image, and if there are cracks, it will be difficult to detect them at the punching stage, so the product This is because it breaks easily.

The thickness of the kombu is generally 21111 mm or more to ensure the amount of stock and the strength of the product and the strength of straining, but if the kombu is thin, Naturally, the restoration time required when returning to water is short, so it is necessary to select an appropriate material depending on the application.

The selected kelp is sometimes treated with a color-enhancing process to maintain its green color. It is treated by soaking kelp in water containing some copper ions and 1-3% salt. That is, as one example, fresh water is poured into a copper pot, heated to a boil, then 1 to 3% of salt is added, the heat is turned off, and the water is allowed to cool to produce salt water containing copper ions. Therefore, if you put steel material in a copper pot in advance, you will be able to secure copper ions even more effectively, but since the key is to make salt water containing copper ions, there are other things you can do in a plastic container. It is also possible to create a vessel by placing steel in the tank and filling it with seawater.

As shown in FIG. 1, a pattern 3 of desired characters or patterns is carved into a plastic plate 1 having a thickness of 5 as using a scroll saw 2 or the like.
(Large letters in the example) A stainless steel belt-shaped plate with a thickness of 1 mm and a width of about 8 m + s, which has been sharpened into a blade shape on one side in advance, is fitted along this mold with the blade 4 facing up, and then fitted on the back side. A plastic plate 5 of about 21111 is attached to fix the blade.

(See Figure 2) As a result, a stainless steel blade 4 with a height of 31 mm is formed, and the kelp with a thickness of 21 mm can be punched out according to the shape, and the blade 4 will not corrode.

Place and fix the blade 4 of such a blade type 6 on the workbench 7 with the blade 4 facing upward, place the kelp 8 on top of the blade 4, and punch out the tangible kelp by pressing it while rotating the wooden roller.
(See Figure 3) The reason why the kelp is placed on the blade 4 and pressed with a roller is to apply even pressure over the entire area between the blade and the kelp, and this prevents the kelp from losing its shape. Accurate pattern is maintained.

As shown in Fig. 4, these punches are made by connecting the blade dies 6 and attaching them to a roller 9, and the roller 13 facing this is made of hard rubber and supported by a shaft 12, inserted and held between them. A predetermined pressure is applied to the kelp 8 due to the elasticity of the rubber, and as described above, it is possible to mass-produce a large amount of products without wall wrinkles.

At this time, in order to speed up the removal of the product from the blade mold, an appropriate number of air blow holes 10 are provided in the blade mold, and high-pressure air supplied from the central shaft 11 of the roller 9 is guided through these holes. After punching is completed, air is connected to push out the product.

Although the product shrinks to a certain extent, it is not damaged by excessive drying and is lightly pinched, and on the other hand, it is not susceptible to mold or rot due to too much moisture, making it possible to store it for a long time.
