Abstract

PURPOSE:To obtain the titled high-quality extract with a high extraction efficiency, by extracting coffee with carbon dioxide in a liquid state under specific super critical condition. CONSTITUTION:Parched coffee beans are filled in an extractor 5 and liquid carbon dioxide is fed from a storage tank 1 under 100-300kg/cm<2> pressure by a pump 3 to extract the coffee beans at a temperature adjusted to 5-30 deg.C. Pressure is reduced by a pressure control valve 6 to gasify the carbon dioxide in a separator 7 and the aimed extract is taken from the bottom of the separator.
