질산염 환원 활성 외 락토바실러스 김치쿠스가 철 이온(Fe3+) 환원 활성도 갖는지 확인하기 위한 실험을 수행하였다. 락토바실러스 김치쿠스 (Lactobacillus kimchicus) (KCTC 12976), 락토바실러스 락티스 (Lactobacillus lactis) (ATCC 11454), 락토바실러스 카제이 (Lactobacillus casei) (ATCC 393), 락토바실러스 플란타럼 (Lactobacillus plantarum) (ATCC 8014), 락토바실러스 람노서스 GG (Lactobacillus rhamnosus GG) (ATCC 53103), 류코노스톡 메센테로이데스 (Leuconostoc mesenteroides) (KCTC 3530) 7.1, 7.4, 7.7log CFU/ml 유산균들을 100 μg/mL 황산제2철 (ferric sulfate)을 포함하는 5% MRS 에서 배양하였으며, 배양 24시간 후 철 이온 환원 활성을 확인하였다. 이때 각 균주들의 ferric ion에 대한 환원활성을 ferrozine을 이용하여 평가하였고, 각 시간 별로 배양액을 취하여 원심분리(8,000×g, 3 min)에 의해 상등액을 회수한 후, 상등액 150 μL와 1 mM ferrozine 50 μL를 혼합하여 상온의 암소에서 20분 동안 반응시키고 562 nm에서 흡광도를 측정하였다. 각 유산균주의 철 이온 환원능을 확인한 결과를 도 8에 나타내었다. 모든 실험 결과는 3회 이상의 반복실험을 통해 평균±표준편차로 나타내었다.In addition to nitrate reduction activity, an experiment was conducted to determine whether Lactobacillus kimchicus also has iron ion (Fe3+) reduction activity. The results of confirming the ferric ion reduction ability of each lactic acid bacteria strain are shown in Fig. 8. All experimental results were expressed as the mean ± standard deviation through more than three repeated experiments.

A composition for reducing nitrate, wherein the Lactobacillus kimchicus strain having nitrate reducing ability (here, the strain is deposited as KCTC 12976) has nitrite scavenging ability in the first paragraph.
In claim 1, the composition is a nitrate reducing composition for reducing nitrate present in fruits or vegetables.
In claim 4, the nitrate reducing composition is at least one selected from the group consisting of lettuce, spinach, pumpkin, green onion, cabbage, radish, Chinese cabbage, chives, carrots, celery, potatoes, beets, red beets, cucumbers, eggplants, tomatoes, paprika, watermelons, bananas, apples, pears, peaches, grapes, cantaloupes, and strawberries.
