Claims (13)
- 천연과일로부터 수득된 천연과실액에 커피생두를 침지하는 커피생두 침지단계;
상기 천연과실액에 침지된 커피생두를 건져내 저온에서 건조하는 저온건조단계; 및
상기 저온건조된 커피 생두를 190 내지 230℃의 온도에서 볶는 로스팅 단계를 포함하는 천연과일향 원두커피의 제조방법. - 제1항에 있어서,
에 있어서, 상기 커피생두는 아라비카, 로부스타, 및 리베리카 품종인, 천연과일향 원두커피의 제조방법. - 제1항에 있어서,
상기 천연과일은 딸기, 체리, 사과, 배, 파인애플, 산딸기, 복분자, 키위, 바나나, 복숭아, 자두, 살구, 망고, 리치, 람부탄, 롱간, 망고스틴, 패션프루츠, 포도, 머루, 오디, 다래, 오렌지, 스위티, 자몽, 용과, 귤, 금귤, 블루베리, 크랜베리, 아로니아, 프룬, 아사이베리, 구스베리, 아세롤라, 엘더베리, 석류, 레몬, 라임, 앵두, 무화과, 감, 대추, 참외, 수박, 모과, 으름, 유자, 구아바, 노니, 토마토, 과라나, 니파팜, 대추야자, 두리안, 또는 파파야인, 천연과일향 원두커피의 제조방법. - 제1항에 있어서,
상기 천연과실액은 2 내지 4%(w/v)의 식염 및 1 내지 4%(v/v)의 식초가 처리되는, 천연과일향 원두커피의 제조방법. - 제1항에 있어서,
상기 커피 생두 침지단계에서 천연과실액 대 커피 생두 비율은 500 내지 900 g/L인, 천연과일향 원두커피의 제조방법. - 제1항에 있어서,
상기 커피 생두 침지단계는 1 내지 5일 동안 수행되는, 천연과일향 원두커피의 제조방법. - 제1항에 있어서,
상기 저온건조 단계는 상온 또는 20 내지 35℃의 온도에서 수행되는, 천연과일향 원두커피의 제조방법. - 제1항에 있어서,
상기 로스팅 단계는 170 내지 200℃의 온도로 미리 가열된 로스터에 상기 건조된 커피 생두를 투입하고, 온도를 190 내지 230℃로 올려 15 내지 25분간 수행되는, 천연과일향 원두커피의 제조방법. - 제8항에 있어서,
드립커피를 제조할 때는 190 내지 215℃의 온도로 로스팅되는, 천연과일향 원두커피의 제조방법. - 제8항에 있어서,
에스프레소용 커피를 제조할 때는 200 내지 225℃의 온도로 로스팅되는, 천연과일향 원두커피의 제조방법. - 제1항 내지 제10항 중 어느 한 항에 있어서,
상기 로스팅된 커피 원두를 분쇄하는 분쇄단계를 추가로 포함하는, 천연과일향 원두커피의 제조방법. - 제1항 내지 제10항 중 어느 한 항의 방법으로 제조가 된 천연과일향 원두커피.
- 제11항의 방법으로 제조가 된 천연과일향 분말 원두커피.
