Description
Claims (8)
- 음이온 변성 셀룰로오스 나노파이버를 함유하는, 식품용 첨가제.
- 제1항에 있어서, 상기 음이온 변성 셀룰로오스 나노파이버의 글루코스 단위당 카르복시메틸 치환도가 0.01 내지 0.50의 범위 내인, 식품용 첨가제.
- 제1항 또는 제2항에 있어서, 상기 음이온 변성 셀룰로오스 나노파이버의 수분 함유량이 12질량% 이하이고, 또한 하기 (1) 내지 (5)의 공정에 의해 구해지는 상기 음이온 변성 셀룰로오스 나노파이버의 CNF 분산 지수가 8,000 이하인, 식품용 첨가제.
공정 (1): 상기 음이온 변성 셀룰로오스 나노파이버에 25℃의 물을 첨가하여 5분간 교반하고, 수득되는 1.0질량%의 음이온 변성 셀룰로오스 나노파이버 분산액 1g에, 평균 입자 직경이 0.03㎛ 이상 1㎛ 이하인 유색 안료를 5 내지 20질량% 함유하는 색재(色材)를 첨가하고, 1분간 교반하는 공정;
공정 (2): 상기 공정 (1)에서 수득되는 색재를 함유하는 음이온 변성 셀룰로오스 나노파이버 분산액을 2장의 유리판 사이에 끼워, 2장의 유리판 사이에 막 두께가 0.15mm인 막을 형성하는 공정;
공정 (3): 상기 공정 (2)에서 수득되는 막을 현미경(배율: 100배)으로 관찰하는 공정;
공정 (4): 상기 공정 (3)에서 관찰되는 막의 3mm×2.3mm의 범위에 존재하는 응집물의 장경(長徑)을 측정하고, 응집물을, 특대: 장경 150㎛ 이상의 응집물, 대: 장경 100㎛ 이상 150㎛ 미만의 응집물, 중: 장경 50㎛ 이상 100㎛ 미만의 응집물, 소: 장경 20㎛ 이상 50㎛ 미만의 응집물로 분류하는 공정; 및
공정 (5): 상기 공정 (4)에서 분류한 각 응집물의 개수를, 하기 식에 대입함으로써 CNF 분산 지수를 산출하는 공정;
CNF 분산 지수=(특대의 응집물의 개수×512 + 대의 응집물의 개수×64 + 중의 응집물의 개수×8 + 소의 응집물의 개수×1)÷2. - 제1항 또는 제2항에 있어서, 상기 음이온 변성 셀룰로오스 나노파이버의 수분 함유량이 12질량%를 초과하고 있고, 또한 상기 음이온 변성 셀룰로오스 나노파이버의, 하기 (1') 내지 (5)의 공정에 의해 구해지는 CNF 분산 지수가 8,000 이하인, 식품용 첨가제.
공정 (1'): 음이온 변성 셀룰로오스 나노파이버의 수분 함유량을 조정하고, 수득되는 1.0질량%의 음이온 변성 셀룰로오스 나노파이버 분산액 1g에, 평균 입자 직경이 0.03㎛ 이상 1㎛ 이하인 유색 안료를 5 내지 20질량% 함유하는 색재를 첨가하고, 1분간 교반하는 공정;
공정 (2): 상기 공정 (1')에서 수득되는 색재를 함유하는 음이온 변성 셀룰로오스 나노파이버 분산액을 2장의 유리판 사이에 끼워, 2장의 유리판 사이에 막 두께가 0.15mm인 막을 형성하는 공정;

- 제1항 내지 제4항 중 어느 한 항에 기재된 식품용 첨가제를 함유하는, 튀김 식품.
- 제1항 내지 제4항 중 어느 한 항에 기재된 식품용 첨가제를 함유하는, 분산계 음료.
- 제1항 내지 제4항 중 어느 한 항에 기재된 식품용 첨가제를 함유하는, 곡물 가루 가공 식품.
