Claims (7)
- γ-글루타밀 결합수가 2 ~ 4, 펩타이드 쇄장이 γ-글루타밀 결합수 +1 ~ +2인 것을 특징으로 하는 펩타이드 또는 그 염을 유효 성분으로 하는 것을 특징으로 하는, 식품의 바디감 부여제.
- 청구항 1의 기재에 있어서,
모든 γ-글루타밀 결합이, 펩타이드의 N 말단측으로부터 연속하고 있는, 바디감 부여제. - 청구항 2의 기재에 있어서,
펩타이드의 C 말단이, 글루타민산과 γ-글루타밀 결합한 아미노산 또는 아미노산 유도체인, 바디감 부여제. - γ-Glu-γ-Glu-X (X는 아미노산 또는 아미노산 유도체임, 이하 같음) 의 배열로 이루어진 펩타이드, γ-Glu-γ-Glu-γ-Glu-X의 배열로 이루어진 펩타이드, 및 γ-Glu-γ-Glu-γ-Glu-γ-Glu-X의 배열로 이루어진 펩타이드, 로 이루어진 군에서 선택되는 1종 또는 2종 이상의 펩타이드 또는 그 염을 유효 성분으로 하는 것을 특징으로 하는, 식품의 바디감 부여제.
- 청구항 4의 기재에 있어서,
X가, Tyr, Ala, Glu, Gln, Asp, Asn, Arg, His, Ile, Leu, Phe, Ser 및 Val로 이루어진 군에서 선택되는, 바디감 부여제. - γ-글루타밀 결합수가 2 ~ 4, 펩타이드 쇄장이 γ-글루타밀 결합수 +1 ~ +2인 것을 특징으로 하는 펩타이드 또는 그 염을 식품 또는 식품의 원료에 함유시키는 것을 특징으로 하는, 바디감이 부여된 식품의 제조법.
