Abstract
Description
Claims (14)
- 즉석(ready to drink, RTD) 음료 제품으로서,
우유, 무지방 건조 우유, 크림, 탈지 우유 또는 반탈지 우유, 또는 이들의 조합;
1 내지 5 중량/중량% 범위의 첨가 당;
0.01 내지 0.03 중량/중량% 범위의 고 아실 겔란 검; 및
산미제를 포함하고;
상기 음료는 레이저 회절법으로 측정될 때 부피 기반 평균 직경 값 D [4,3]이 5 내지 10μm 범위이고 4℃에서 75sec-1의 전단률에서 측정된 점도가 3 내지 30cP 범위인 카제인-유청 단백질 응집물을 포함하는, RTD 음료 제품. - 제1항에 있어서, 상기 산미제는 락트산, 아스코르브산, 시트르산, 또는 이들의 조합을 포함하는, RTD 음료.
- 제2항에 있어서, 상기 산미제는 0.03 내지 0.06 중량/중량% 범위의 락트산인, RTD 음료.
- 제1항에 있어서, 상기 RTD 음료는 코코아(cocoa)를 포함하는 우유 기반 음료인, RTD 음료.
- 제1항에 있어서, 상기 RTD 음료는 커피 기반 음료이고 상기 산미제는 커피인, RTD 음료.
- 제5항에 있어서, 상기 커피는 가용성 커피, 미분화된 커피 입자, 커피 추출물, 커피 농축물 및 이들의 조합인, RTD 음료.
- 제6항에 있어서, 상기 커피는 0.5 내지 1.5 중량/중량% 범위의 농도의 아라비카 또는 로부스타 커피 또는 이들의 조합을 포함하는, RTD 음료.
- 제2항에 있어서, 탄산칼슘, 인산칼슘, 락트산-시트르산칼슘, 시트르산칼슘, 중탄산나트륨, 중탄산칼륨, 또는 이들의 조합을 추가로 포함하는, RTD 음료.
- 제5항에 있어서, 중탄산나트륨, 중탄산칼륨, 또는 이들의 조합을 추가로 포함하는, RTD 음료.

- 135 내지 300바 범위의 전체 압력 및 65 내지 80℃ 범위의 온도에서 상기 혼합물을 균질화하는 단계;
- 3 내지 30초 동안 136 내지 150℃의 UHT 조건에서 멸균하는 단계;
- 상기 획득된 음료 베이스 제품을 25℃ 이하로 냉각하는 단계; 및
