Abstract
Description
Claims (9)
- 맥즙 발효액, 5.3ppm을 초과하고 80ppm 미만인 피루브산 및 29.2ppm을 초과하고 90ppm 미만인 숙신산을 포함하고, 2.0%(w/w)를 초과하는 진정 추출물 농도를 갖는, 알코올 농도가 1%(v/v) 미만인, 맥주맛 발효 맥아 음료.
- 제1항에 있어서, 상기 피루브산의 농도가 20 내지 75ppm인, 맥주맛 발효 맥아 음료.
- 제1항 또는 제2항에 있어서, 상기 숙신산의 농도가 35 내지 85ppm인, 맥주맛 발효 맥아 음료.
- 제1항 내지 제3항 중 어느 한 항에 있어서, 상기 맥즙 발효액이 탈알코올 맥즙 발효액인, 맥주맛 발효 맥아 음료.
- 제1항 내지 제4항 중 어느 한 항에 있어서, 상기 맥즙 발효액이 맥즙 하면 발효액인, 맥주맛 발효 맥아 음료.
- 제1항 내지 제5항 중 어느 한 항에 있어서, 상기 맥즙 발효액이 80% 이하의 외관 최종 발효도를 갖는, 맥주맛 발효 맥아 음료.
- 제1항 내지 제6항 중 어느 한 항에 있어서, 25% 이상의 맥아 사용 비율을 갖는, 맥주맛 발효 맥아 음료.
- 제1항 내지 제7항 중 어느 한 항에 있어서, 2.0%(w/w)를 초과하는 진정 추출물 농도를 갖는, 맥주맛 발효 맥아 음료.
- 맥즙 발효액을 얻는 공정;
해당 맥즙 발효액으로부터 알코올을 제거함으로써, 그 알코올 농도를 1%(v/v) 미만으로 감소시키는 공정
을 포함하는, 5.3ppm을 초과하고 80ppm 미만인 피루브산 및 29.2ppm을 초과하고 90ppm 미만인 숙신산을 포함하고, 2.0%(w/w)를 초과하는 진정 추출물 농도를 갖는, 알코올 농도가 1%(v/v) 미만인, 맥주맛 발효 맥아 음료의 제조 방법.
