Claims (5)
- 콩을 가압하에서 증기로 조리하며, 진공하에 방치하여 냉각시킨 후 건조시키는 것을 특징으로 하는 즉석 재수화 콩(Fast Rehydrating Pulses)의 제조법.
- 제1항에 있어서, 출발물질로서 물의 함량이 40-80%인 콩을 105-140℃에서 3-40분 동안 조리하며, 증기 및/또는 옹축된 증기를 배출시켜 잔류압이 300 mbar 이하가 되도록 함으로써 진공하게 방치하고 2-10분간 이 진공상태를 유지하는 동안 20-80℃의 온도까지 냉각시키는 것을 특징으로 하는 제조법.
- 제1항에 있어서, 콩을 건조시켜 잔류하는 물의 함량이 3-10%이 됨을 특징으로 하는 방법.
- 제3항에 있어서, 20-40 mbar에서 5-20 시간 동안, 40-60℃에서 진공하에서 콩을 건조시키는 제조법.
- 제1항 내지 4항 중 어느 한 항에 따른 제조법으로 수득되는 즉석 재수화 콩.
