Abstract
La présente invention concerne procédé de texturation de produits alimentaires et/ou alicament de type « génoise » ou « mousse solide » comprenant au moins: (a)une transformation par un broyage maîtrisé d'une préparation d'au moins une denrée alimentaire, apte à préserver les propriétés organoleptiques souhaitées, apte à obtenir un broyat, (b)un ajout d'une molécule de structure inactive, audit broyat pour obtenir un mélange, (c) expansion mécanique obtenue par une diminution de la pression du mélange obtenu lors de l'étape (b), (d) activation de la molécule de structure, caractérisé en ce que l'expansion mécanique est réalisée par une diminution de pression d'au moins 6 bars, de préférence entre 6 et 20 bars, de préférence entre 10 et 18 bars.
