Abstract
La presente invención se relaciona con un método para texturizar alimenticios y/o productos nutracéuticos de tipo ``bizcocho´´ o ``espuma sólida´´ que comprende al menos: (a) una transformación mediante molido controlado de una preparación de al menos un alimento, capaz de conservar las propiedades organopléticas, deseadas, capaz de obtener un material molido, (b) adición de una molécula con una estructura inactiva a dicho material molido para obtener una mezcla, (c) presurización de la mezcla obtenida en el paso (b) mediante la incorporación de gas disuelto en dicha mezcla, (d); expansión mecánica obtenida al reducir la presión de la mezcla obtenida en el paso (b), (e) activación de la molécula de estructura caracterizada porque la expansión mecánica es lograda al reducir la presión en al menos 6 barias, de preferencia entre 6 y 20 barias, de preferencia entre 10 y 18 horas.
