Abstract
L'invention concerne un procédé d'élimination des glucosinolates de farines d'oléagineux, tels que des farines d'oléagineux de brassica carinata. Dans un mode de réalisation, la myrosinase exogène est utilisée pour convertir les glucosinolates en composés isothiocyanates volatils, qui peuvent ensuite être éliminés dans des conditions de chaleur douce et de pression négative. Dans un autre mode de réalisation, la chaleur et la pression sont utilisées pour éliminer les glucosinolates de l'huile de graine de brassica carinata. Les farines traitées peuvent contenir moins de 80% de leurs taux de glucosinolates de départ et peuvent convenir à diverses applications, notamment en tant qu'aliments pour animaux
