Le brevet d'invention concerne une formulation et le procédé dobtention dun produit alimentaire riche en fibre, sans gluten, à faible teneur en caféine, à base de la pulpe de caroube (poudre et sirop), combinée avec la pâte de noix et/ou amande, avec ou sans sucres ajoutés, avec ou sans cacao, produisant un produit alimentaire aux caractéristiques nutritionnelles particulières pour répondre aux exigences des consommateurs ayant des restrictions alimentaires dues à des problèmes de santé ou au mode de vie (régimes alimentaires avec limitation en caféine, besoin en fibre, allergique au gluten, aliment sans lactose.. etc.) avec des attributs de couleur, d'odeur et de saveur caractéristiques des produits à base de caroube, de noix et/ou amande et avec/sans cacao.The invention patent relates to a formulation and the process for obtaining a fiber-rich, gluten-free, low-caffeine food product based on carob pulp (powder and syrup), combined with nut and/or almond paste, with or without added sugars, with or without cocoa, producing a food product with particular nutritional characteristics to meet the requirements of consumers with dietary restrictions due to health problems or lifestyle (caffeine-limited diets, fiber needs, gluten allergy, lactose-free food, etc.) with color, odor and flavor attributes characteristic of carob, nut and/or almond products and with/without cocoa.
