Изобретение относится к молочной промышленности, а именно к способу получения сыра из козьего молока.Способ, согласно изобретению, включает пастеризацию молока, добавление закваски содержащей штаммы молочнокислых бактерий Lactococcus lactisssp. lactis CNMN-LB-74, Lactococcus lactisssp. lactis CNMN-LB-75, Lactococcus lactis ssp. cremoris CNMN-LB-78, Lactococcus diacetylactis CNMN-LB-73, Streptococcus thermophilus CNMN-LB-79, добавление хлорида кальция и коагулирующих ферментов, отделение сгустка, его резку, посол и созревание сыра.
