Abstract

Invenţia se referă la industria vinicolă, şi anume la un procedeu de fabricare a vinului roşu sec cu conţinut sporit de substanţe biologic active.Procedeul, conform invenţiei, include tratarea strugurilor cu frig la temperatura de -5…0°C în decurs de 12...24 ore, zdrobirea şi desciorchinarea strugurilor cu obţinerea mustuielii, scurgerea din aceasta a unei părţi de must în cantitate de 2…10%, macerarea-fermentarea mustuielii în decurs de 5…10 zile cu amestecare periodică, după care urmează separarea, postfermentarea şi limpezirea vinului tânăr. Totodată, se utilizează struguri cu un conţinut de zaharuri de cel puţin 22%, cu o rezervă tehnologică înaltă de substanţe fenolice şi colorante, precum şi cu un conţinut mare de seminţe.
