Abstract

Изобретение относится к винодельческой промышленности, а именно к способу получения винного дистиллята для производства бренди.Сущность изобретения состоит в производстве низкоспиртуозного виноматериала и его перегонке.Новым в изобретении является добавление сахара и разводки чистой культуры сухих активных винных дрожжей Saccharamyces bayanus в низкоспиртуозный виноматериал перед перегонкой.Обработанный виноматериал подвергают медленному вторичному брожению до получения виноматериала крепостью 8…12 об.%, который затем перегоняют с образовавшейся биомассой дрожжей, после чего полученный винный дистиллят очищают с помощью активированного угля SIHA-CARBOGRAN Ge с последующей декантацией или фильтрацией.Технический результат изобретения состоит в улучшении физико-химических показателей и органолептических свойств виноматериала при уменьшении затрат на единицу продукции.
