Abstract

Invenţia se referă la industria alimentară, în special la fabricarea produselor de patiserie.Procedeul propus include prepararea siropului prin amestecarea zahărului cu melasă în raport de 1 : 2, fierberea ulterioară a lui până la conţinutul substanţelor solide de 68…72%, introducerea produselor vegetale, amestecarea pastei de patiserie concomitent cu fierberea, introducerea la sfârşitul fierberii a aromatizatorului, răcirea pastei obţinute şi fasonarea ei. În calitate de produse vegetale se foloseşte miez de nucă în prealabil uscat şi fărâmiţat, la care se mai pot adăuga stafide sau fructe uscate şi mărunţite, sau mac în raport de 5 : 1.Rezultatul invenţiei constă în micşorarea viscozităţii pastei de patiserie şi îmbogăţirea produselor de patiserie obţinute cu componente biologic active.
