Abstract
The invention refers to the wine industry.The process, according to the invention, provides for the collection of raw material containing phenolic substances, the preliminary treatment, including: heating at a temperature of 50°C within 90 min, wet steam treatment at a temperature of 50°C within 90 min, drying within 72 h at a temperature of 45°C with gradual increase of the temperature up to 70°C within 96 h, wet steam treatment at a temperature of 80°C within 90 min, drying within 24 h with gradual decrease of the temperature from 80°C up to 40°C and natural cooling within 24 h up to a temperature of 10…25°C. Afterwards, the treated raw material is comminuted up to dimensions of 40x40x40 mm, it is thermally treated at a temperature of 105…110°C during 96 h and it is subjected to extraction with hydroalcoholic solution within 5…10 days at a temperature of 35…45°C with 2…3 times administration of oxygen in a dose of 10…15 mg/dm3.
