Abstract

The invention relates to the winemaking industry, especially to one of the processes for sparkling wine production.The purpose of the invention is lowering of production costs and rational raw material use.The method forsees blending of wine materials, cold treatment by bentonite, then maturation, removal from sediment with cold filtration, legueur preparing from part of treated blending by its mixing with sugar citric acid and introducing it into the blending, after that is carried out filtration and saturation of the prepared blending.The novelty consists in the fact that is forseen blending of nontreated wine materials from grape and apples at the ratio 60-40:40-60, introducing of tannine in the quantity of 75-100 mg/dm3 and heating up to 70±2°C during 10-20 min.
