Abstract

Inventia se refera la industria alimentara, in particular la industria conservelor si poate fi utilizata la producerea pateurilor. Procedeul de producere a pateului din leguminoase cu ficat include pregatirea legumelor si a ficatului, inmuierea nautului sau mazarii, sau bobului, sau fasolei, sau lintei in apa la temperatura de 15...20(C timp de 8...15 ore, blansarea cu aburi la presiunea de 1,5 atm timp de 20...40 min, omogenizarea acestora pana la obtinerea consistentei de pireu, maruntirea, prajirea si frecarea morcovului si a cepei. Blansarea ficatului se efectueaza la temperatura de 80...100(C timp de 20...30 min, dupa care acesta se freaca si se amesteca cu pireul din leguminoase, cu ceapa si morcovul frecate, precum si cu sare de bucatarie, piper negru, ardei rosu, chimen, coriandru, verdeata de busuioc, maghiran, cimbru, isop, rozmarin, leustean si apa. Dupa aceasta se efectueaza omogenizarea, tratarea termica la temperatura de 80...90(C, preambalarea, astuparea si sterilizarea produsului obtinut. ŕ
