Abstract

La invencion se refiere a un procedimiento para la microfiltracion con flujo transversal de cerveza. Par impedir el congestionamiento de la membrana del modulo filtrador por los ingredientes de la cerveza no clarificada, que deben ser eliminados por filtracion y que se depositan como una capa recubridora, se interrumpe la filtracion en ciertos intervalos. En una breve pausa subsiguiente se disuelve la capa recubridora que se encuentra en la membrana, químicamente por medio de una lejía después de lo cual se retira la capa recubridora por retroenjuague de la membrana con agua. Para mejorar adicionalmente la filtracion se controla durante la fase de filtracion la presion transmembranal (p) de acuerdo con una funcion de tiempo fundamentalmente periodica y se eleva fundamentalmente en forma continua la velocidad de inundacion (v) de la cerveza por encima de la membrana.
