Abstract
A process for obtaining polyphenols-rich extract from unfermented cocoa beans characterized in that it is obtained by means of the following process: (i) removing cocoa pod from the beans; (ii) mixing the beans with water at a 1: 1 ratio; (iii) extracting cocoa juice from mixture in (ii); (iv) drying the beans from (iii); (v) preheating said dried beans with infrared at 120?c - 160?c for 5-20 sec; (vi) winnowing the beans from step (v) to remove the shells and get de-shell beans; (vii) de-fatting said beans from step (vi); (viii) extracting polyphenols from de-fatted beans in (vii) in an extractor at 40- 70? using 50-90% undenatured ethanol and water; and (ix) removing ethanol from polyphenols-rich extract from step (viii).
