Abstract
Fremgangsmåte for inhibering av dannelse av hvitt belegg på bearbeidede gulrøtter, omfattende at gulrøttene bearbeides for konsumpsjon og behandles med en oppløsning av sitronsyre og L- cysteinhydroklorid, i vektprosent- forhold som varierer fra ca. 71 % sitronsyre/29 % L-cysteinhydroklorid, til ca. 90 % sitronsyre/10 % L-cystein- hydroklorid, og resten vann inntil sitronsyren og L-cysteinhydrokloridet er blitt fortynnet til en kombinert vektpro&entkonsentrasjon fra ca. 0,7 til minst 1,7 vekt% av oppløsningen, behandlingen inkluderer at de bearbeidede gulrøtter bringes i kontakt med oppløsningen i en tilstrekkelig tid slik at denne kontakt inhiberer dannelsen av hvitt belegg på de bearbeidede gulrøtter når de utsettes for en atmosfære som ville føre til dannelse av hvitt belegg på de bearbeidede gulrøtter i fravær av denne kontakt.
