Description
The present invention relates to the manufacture of bakery products based on cassava bread flour combined with wheat flour and its manufacturing process. The invention relates to the manufacturing process of the bakery product, in particular sweet and/or savory bread.
Bread, a traditional food, is usually made from wheat flour, water, salt and yeast. In recent years, the consumption of this food has increased dramatically in several developing countries due to rising population, urbanization and changing eating habits.
However, most of these countries depend on expensive imports of wheat, the main raw material for bakeries and pastries. In these countries, the price of wheat flour is automatically increased with the exchange rate, thus leading to a direct or indirect increase in the price of bread. Unfortunately, ecological conditions do not allow the production of this essential raw material in African countries in general and for Benin in particular. To save foreign currency and reduce or stabilize the price of bread in these countries, it is therefore useful to look for a plant with great adaptability to varied ecological situations, easy to cultivate and can be transformed into flour usable in bakery.
Trials of production of bread from cassava flour (50%) have been conducted satisfactorily (CEA, 1985 cited by PADSA, 1997).
It is also known in the state of the art, a bread made from 100% cassava flour that rises well. The ingredients (cassava flour, egg white, margarine, toasted soy flour, yeast, sugar and water) are mixed to obtain a dough that doubles its volume in 60 minutes of fermentation. The leavened dough is baked at 200 ° C for 30 minutes in an oven. This spongy textured bread has a fine and regular crumb and does not stick to the fingers (PADSA, 1997). It is also a nutritious bread because it contains soy flour and egg white, two raw materials rich in protein.
Also known in the state of the art are breads made using the intensified kneading process known as the Chorleywood process (FAO, 1985), in which process, the compound flour is made up of 70% wheat flour and 30% cassava flour. Before kneading, the yeast is activated in sugar water. The yeast is activated for half an hour and all the ingredients are mixed together in a high-speed mixer.
While these technologies present in the prior art make it possible to obtain very interesting results, concerns remain. Indeed, it is not possible to mix even a certain percentage of cassava flour with a dough prepared with wheat flour without otherwise harming the possibility and success of the manufacturing as well as the appearance of the product obtained.
On the other hand, the use of such a mixture even in small proportions comes up against a general prejudice, because the cassava flour available until now, although slightly added to the dough, already caused a certain harm to the properties of the bakery products and in particular to their taste.
The purpose of the invention is to enable the preparation of the dough in such a way that 1% to 30% of cassava bread flour can be used without prejudice to the possibility of manufacture, the appearance, the effect and the taste of the bakery products. The inventor has surprisingly obtained a good result by combining cassava flour with wheat flour by adding to the cassava bread flour an improver composed of vitamins and proteins. This improver to which ascorbic acid is added allows the increase in the rate of substitution of wheat flour by cassava bread flour.
According to one embodiment of the invention, the cassava bread flour used is obtained from the cassava varieties, RB 89505 and RB 89509 of the adapted technical production route, the technology for producing the cossettes and the technology for producing the bread flour. The mixture of the bread flour is made according to well-defined proportions and the category of bread to be made.
The raw material, made from a mixture of cassava bread flour from the RB 89505 and RB 509 varieties and wheat flour, to which an improver composed of vitamins and proteins as well as ascorbic acid is added, makes it possible to obtain a finished product free from the characteristic odor of cassava.
According to one embodiment of the invention, a proportion of bread flour of between 10 and 20% is used for the production of savory bread.
According to another embodiment of the invention, the production of sweet bread requires a mixture of cassava bread flour in a proportion of 15 to 30%.
The invention will be better understood in relation to the following examples, given without limitation.
According to an important characteristic of the invention, the cossettes are ground in order to obtain a bread flour of a particle size suitable for making bread.
After grinding, the breadmaking fineness is deepened with other materials such as peanut oil in order to further improve the result. Once the breadmaking flour is obtained, a mixture of said flour is made according to well-defined proportions and according to the type of bread to be made. Thus for 100 kg of flour to be prepared, approximately 10 to 20% of cassava breadmaking flour is required to make savory bread, and 15 to 30% of cassava breadmaking flour for making sweet bread.
Cet améliorant permet l’augmentation du taux de substitution de la farine de blé par la farine panifiable de manioc de 1% à 30%.According to a characteristic of the invention, to the mixture composed of wheat flour and cassava bread flour is added a quantity of improver composed of vitamins and proteins corresponding to approximately 1% of the quantity of said mixture as well as 5 to 15 grams per 50 kg of flour. This improver allows the rate of substitution of wheat flour by cassava bread flour to be increased from 1% to 30%.
En résumé, le procédé de préparation comprend les étapes suivantes :According to the invention, the cassava bread flour and the wheat flour are brought into the kneader as well as the usual ingredients such as ice cream, yeast. Once the different elements are in the kneader, the improver composed of vitamins and proteins as well as ascorbic acid are added. After kneading the mixture in the kneader, a soft flour dough is obtained. This dough is left to rest so that the yeast activity can truly begin. The observation time, which depends on the humidity in the dough and the temperature of said dough, varies between 15 and 25 minutes. The dough follows the pointing phase then the fermentation phase. By the sourdough or yeast fermentation carried out according to the invention, the typical properties of the flour are removed, that is to say that the characteristic and often unpleasant odor and taste of cassava disappear completely. Then come the stages of dressing, scarification and cooking. In summary, the preparation process includes the following steps:
• Mettre la farine panifiable de manioc et la farine de blé dans le pétrin ;• Put the cassava bread flour and the wheat flour in the mixer;
• Ajouter les glaces, la levure ;• Add the ice cream, the yeast;
• Ajouter l’améliorant composé de vitamines et de protéines ;• Add the improver composed of vitamins and proteins;
• Ajouter l’acide ascorbique ;• Add ascorbic acid;
• Malaxer le mélange pour obtenir une pâte de farine tendre ;• Knead the mixture to obtain a soft flour dough;
• Laisser au repos pendant entre 15 et 25 minutes ;• Leave to rest for between 15 and 25 minutes;
• Procéder au pointage et la fermentation ;• Proceed with pointing and fermentation;
• Apprêter, scarifier et cuire à une température environ 200°C pendant 15 à 20 minutes permettant d’obtenir le pain selon l’invention.• Prepare, scarify and cook at a temperature of around 200°C for 15 to 20 minutes to obtain the bread according to the invention.
In this way, a bread of total value in all respects is produced by mixing 10 to 25% of cassava bread flour depending on the type of bread. This proportion can be considerably increased in certain cases.
The product and process that are the subject of the invention are of great utility on an economic, health and environmental scale. The human body best manages foods whose raw materials have been produced in the usual local conditions. Thus, bread flour gives consumers the opportunity to consume local products and therefore, to guarantee better health.
In addition, finding cassava in Benin for the manufacture of bread flour promotes the sector because it involves several actors. Thus, all the actors in each link benefit from the chain, hence the development of the local economy.
