Description
The present invention relates to the supplement based on Parkia biglobosa or néré seeds and its manufacturing process.
The artisanal production of dietary supplements or traditional mustards is generally reserved for women who have mastered it. These mustards have been used as culinary broths for centuries to season sauces in Togo and the West African region. At the different stages of this transformation, we can observe variations from one region to another and sometimes from one producer to another in the same region. These variations determine the differences in product quality at the end of the chain. The ingredients used differ from one producer to another depending on the availability of the ingredient. These are most often peanuts, soybeans, néré seeds, etc. These ingredients are used alone or in combination. Broths made from néré seeds alone are very rare.
Furthermore, poor hygiene and counterfeits are notable during the processing process. As a result, culinary broths produced using artisanal processes are variously appreciated and accepted, due to their highly variable quality, ranging from good to very poor. The smell is sometimes very off-putting. Even consumers who have adopted them, especially broth made from néré seeds for health reasons, are also sometimes disappointed by the bland, unpleasant, or bitter taste of certain broths.
The new dietary supplement is characterized by being produced 100% from Parkia biglobosa seeds using an innovative process under the required hygiene and food safety conditions. The production of broths from Parkia biglobosa seeds is carried out following a chronology of steps.
Depending on the artisanal process, the seeds of Parkia biglobosa alone or in combination with other ingredients can be used to prepare a traditional culinary broth.
The innovation lies in this ingredient selection step, as only the seeds of the ripe, dry Parkia biglobosa fruits, with a moisture content of less than 10%, carefully sorted and free of debris and stones, are used for processing. This step is essential to ensure the nutritional and therapeutic quality of the resulting food supplement.
The seeds are most often boiled or rarely roasted before being hulled.
Traditionally, the seeds are cooked in water in pots with a maximum capacity of about 30 liters, for 12 hours over a live fire made from firewood. The efficiency of this cooking with firewood is generally less than 80%, especially when the processor does not have good wood to ensure regular and intense heating.
Le rendement de la cuisson à l’aide de cuiseur industriel est de 100%.According to the new process, the cooking stage is characterized in that it consists of cooking under a pressure of approximately 1.2 bar, at a temperature between 100 and 120°C in industrial electric or gas cookers with a capacity greater than 400 liters, the seeds instead of firewood and small capacity pots. The use of industrial cookers makes it possible to cook twenty-five (25) times the quantity of seeds cooked in a traditional pot; to reduce by half, or 6 hours, the cooking time that would be necessary according to the artisanal process; to limit the cutting of wood and therefore the destruction of the plant cover. The efficiency of cooking using industrial cookers is 100%.
After cooking the cooked seeds must be shelled to obtain the kernels which are used to produce the broth.
Traditionally, to hull cooked seeds, processors must pound them in small quantities that can range from 1/2 to 1/2 cup per placement in the mortar, depending on the capacity of the available mortar and the capacity of the pounder.
On average, each batch must be crushed for 15 minutes before reaching a hulling yield of 70 - 90%. The well-softened shells are reduced to more or less fine pieces to release the kernels with a risk of breaking them. If some seeds are poorly cooked, due to lack of energy, the shells do not detach from the kernel and must be removed manually after washing, thus extending the processing time. Crushing is quite time-consuming and difficult, painful to perform, since it requires human muscle power. This traditional hulling technique does not allow for the processing of a large quantity of raw material per day and per person. For example, it is difficult for a processor to process alone, more than 5 kg (two bowls) of dry seeds after cooking per day. Approximately three hours of time are required to crush such a quantity. The hulling yield, which is around 70 to 90%, requires additional time to sort the unhulled seeds and the remaining pieces of hull that have not been washed off.
The present innovation concerns the hulling stage in that this stage is mechanized by the use of an electric mill to overcome the various difficulties of manual hulling. The hulling efficiency with the electric mill is 98 to 100%. The hulls of well-cooked seeds are reduced to finer pieces, which are easily and quickly removed by washing, thus significantly reducing muscle fatigue and washing time. The remaining debris is almost negligible. For example, forty (40) kg of cooked dry seeds can be hulled in 30 minutes, whereas it took at least 10 to 12 hours to do it manually.
After shelling, a mixture of shell debris and whole almonds is obtained. This mixture is washed to obtain clean almonds.
According to the artisanal process, the almonds are separated from the seed shell debris by washing with well or river water using terracotta strainers or sieves. This step is not so easy. Washing 5 kg of dry seeds after manual hulling and sorting can take more than three hours, especially when the cooking and/or hulling yields are not satisfactory.
The present innovation concerns the washing stage in that the invented process offers the possibility of washing 20 kg of the mixture of shell debris and seed kernels after hulling in less than 20 minutes, in basins built for the occasion minus screening, with a flow of running drinking water instead of well or river water and terracotta strainers. The screening allows any element smaller than that of the seed kernels to pass through. This innovation thus makes it possible to reduce by 4/5 the time required to separate the same quantity of almonds from shell debris using the traditional method.
Traditionnellement, les amandes lavées sont bouillies à 100 °C pendant 30mn à 60 min selon l’intensité du feu:Traditionally, washed almonds are boiled at 100°C for 30 to 60 minutes depending on the intensity of the heat:
They are then drained and fermented in well-covered baskets with the bottom lined with banana leaves or other materials for 72 hours at room temperature between 22 and 35°C. As a guide, a maximum of 15kg of almonds can be fermented in these traditional baskets. The use of leaves does not allow for industrial fermentation.
The present innovation concerns this second cooking stage in that the new process offers the possibility of cooking in the industrial cooker under the same conditions as the seeds, the washed almonds for 30 minutes instead of 30 to 60 minutes. The cooked almonds are tender. They are drained then fermented in closed stainless steel tanks that can contain 100 kg of almonds and not in baskets whose walls are lined with tree leaves.
Drying fermented almonds to obtain the finished product.
Traditional processors crush the fermented almonds with a millstone before drying the resulting paste in the open air in the sun for at least three days on makeshift stalls. In these very unhygienic conditions, the product is exposed to dust and flies that are attracted to it. Thus, the product is subject to all kinds of contamination. Worse, in the rainy season, due to a lack of consecutive sunny days, drying is difficult. The product is likely to be a breeding ground for fly larvae, causing losses. Ultimately, the resulting product loses all its organoleptic qualities and is sometimes simply thrown away. These various difficulties, combined with the cost of the raw material, are the cause of the scarcity or shortage of the product during the rainy season in certain localities.
The present invention relates to the step of drying fermented almonds in that it consists of drying the fermented almonds without being crushed, away from any dust and/or flies at a temperature between 35 and 60°C, in a certified clean electric dryer instead of makeshift displays. This innovation in drying equipment makes it possible to dry the product in a room at any time, day or night, in the dry season as well as in the rainy season. The finished product, well dried with a humidity level of less than 10%, is obtained in 24 hours instead of three (3) to four (4) days of drying in the sun in the open air. The food supplement obtained is of standard organoleptic quality.
Traditional culinary broths are generally presented on the market in the form of flat or round balls, sometimes with fingerprints; without clean and presentable storage packaging. They are thus exposed to dust and other contaminants. Among the few rare packaging used, some are made of chemical substances that react with the product leading to the deterioration of the broth after at most 3 months of storage. This deterioration results in a bland taste, sometimes unpleasant or bitter, uncharacteristic of the broth.
All of its shortcomings do not allow the consumption of this product to be promoted and popularized to the point of making it a real source of income, despite its nutritional and therapeutic importance.
The present invention relates to this packaging step in that the finished product is reduced to powder or not so that it is presented in black granulated form and coffee-colored powder. Before canning, samples of the finished granulated and powdered product are taken and subjected to quality control by physicochemical and microbiological examinations in reference analysis centers.
The packaging used for packaging is certified, compliant with food use, and allows the broth to be stored for 12 months without any risk of spoilage. The storage containers are carefully labeled. The label informs the customer about the nature of the broth, its nutrient composition, its therapeutic benefits, the net weight of the broth, and its expiration date.
The processing of Parkia biglobosa seeds into cooking broth produces liquid waste consisting of wastewater and solid waste, which is the remnants of the seed hulls. In artisanal processing, this waste is discarded in the environment instead of being washed or is carried away by river waters. This practice leads to environmental pollution.
The innovation of the process concerns waste management in that the waste resulting from the processing is not thrown into nature; it is recovered and reused. The shell debris is used as raw material to produce biogas and compost using a biodigester; while the wash water is treated and used for market gardening and fish farming associated with the processing unit.
