Abstract

A process of producing wine from bili (Garcinia vidalii Merr.) fruit comprising the steps of: preparing the ingredients by gathering, cleaning and washing the matured fruit thoroughly; paring the matured/ripe Garcinia vidalii Merr. fruit, removing the seeds of the Garcinia vidalii Merr.; weighing 250 grams of Garcinia vidalii Merr. and add 250 ml water; boil for 30 minutes; straining; measuring 500 ml of Garcinia vidalii Merr.; cooling the Garcinia vidalii Merr. juice; adding 250 grams brown sugar and 5 grams of yeast; pouring the Garcinia vidalii Merr. in the bottle and cover with cloth or gauze; fermenting for 30 days; straining and transferring to another bottle; pasteurizing fermented wine, maintaining a temperature of 30 degrees centigrade for 30 minutes; cooling the pasteurized wine; packaging the Garcinia vidalii Merr. wine.
