Products containing fructose are used in many fields, especially in the pharmaceutical and food industries, where the highest possible fructose concentration in these products is desired. High-fructose syrups, usually containing about 46% by weight of fructose and about 54% by weight of glucose, are produced in a known manner by isomerization of dextrose, usually obtained by hydrolysis of starch. This isomerization is catalyzed by an isomerase enzyme. The known method of inverting sucrose by hydrolysis in the presence of acid or an invertase enzyme enables the production of mixtures containing 50% by weight of fructose and 50% by weight of glucose, which means that it is practically impossible to increase the fructose content in this product. The invention enables the production of products from sucrose containing more than 50% by weight of fructose. This method consists in processing sucrose into a mixture containing fructose, dextrose and polysaccharides, and then isomerizing the dextrose contained in this mixture into fructose by the action of an isomerase enzyme, and hydrolyzing the polysaccharides in the absence of the isomerase enzyme. A feature of the method according to the invention is that in the first stage of the process, sucrose is subjected to the action of a previously unknown enzyme, fructosyl transferase, at a temperature of 25-65°C and at a pH value of 4.5-6.5, then the dextrose contained in the obtained new product, which is a mixture of fructose, dextrose and polysaccharides containing at least 66% by weight of fructosyl groups linked by (2-1)-β linkages, is converted into fructose by the action of an isomerase enzyme, and the polysaccharides contained in this mixture are hydrolyzed in the absence of the isomerase enzyme. The method according to the invention can produce syrups containing even more than 90% by weight of fructose. The products produced by the method according to the invention have the properties of ordinary sugars and syrups, and can therefore be used, for example, as sweeteners or as starting products in the production of pharmaceuticals. They can also be used for the production of adhesives, moisture absorbing agents, glass papers, tanning agents, electrical insulators, and also as binding agents in the production of foundry cores, for the production of insecticides, softeners and thickeners. The term "sucrose" means this disaccharide, refined or raw, in solution or in the dry state, derived from any raw material, e.g. cane or beet sugar. When using the method according to the invention, sucrose is usually used in an aqueous medium. The term "fructose" or "levulose" denotes the isomer of dextrose, which is sweeter than levulose. Both terms refer to the synthesis of this fructose in solution or in the dry state. The term "enzyme preparation" denotes any preparation with a desired enzymatic action, e.g., whole living cells, dried cells, cell extracts, refined and concentrated preparations prepared from cells or from culture liquids. Enzyme preparations can be used in the form of solutions or deposited on carriers. The term "isomerase enzyme" or "isomerase" denotes any enzyme preparations causing the isomerization of dextrose into levulose. Such enzymes are known under the names dextrose isomerase, xylose isomerase and glucose isomerase and are produced from various types of microorganisms, e.g. from the genera Stieptomyces, Bacillus, Arthrobacter, Actinoplares and Curtobacterium. According to the invention, the isomerase derived from Streptomyces olivochromogenes ATCC No. 21713, ATCC No. 21714 or ATCC No. 21715 (a single colony isolated from strain ATCC No. 21713), known e.g. from U.S. Patent No. 3,813,318, is preferably used, and in particular the isomerase produced by the methods described in U.S. Patent Nos. 3,770,589 and 3,813,318. It is also known that the isomerase enzyme can be sedimented in a cell culture medium. on neutral, water-insoluble carriers and in this form used for the continuous conversion of glucose into a high-fructose syrup. Products suitable for enzymatic isomerization and subsequently yielding syrups with a fructose content of over 55% by weight as a result of hydrolysis contain about 20% to 60% by weight of monosaccharides, mainly glycols and with a low content of fructose and about 70% to about 40% by weight of polysaccharides containing more than 66% by weight of fructosyl groups. Particularly valuable secondary products are produced according to the invention from sucrose by transfructosylation in the presence of a sufficient amount of a fructosyl transferase enzyme preparation derived from the strain Pullularia pullulans ATCC 9348, carrying out the process at a temperature of about 25°C - 65°C, in particular 50-60°C, at a pH value of about 4.5-6.5, preferably 5.4-5.6. Under these conditions, the concentration of sucrose in the starting product can be as low as 10 g per 100 ml of water, but it is more advantageous to use solutions with in the highest possible concentration, i.e. about 30-60 g per 100 ml of water, and even saturated sucrose solutions, because then the reaction speed is higher, as described in detail below. Effect of temperature on enzyme activity. The effect of temperature on the reaction rate involving the fructosyl transferase enzyme 4A is determined using a Technicon Autoanalyzer II analyzer as follows. The reaction mixture contains 7.5 ml of a sucrose solution of 80% w/v, 2.3 ml of a 0.1 M citrate buffer solution with a pH of 5.5-50 and 0.2 ml of a pullulan enzyme solution of 2% w/v (the enzyme preparation produced by the method described The final sucrose concentration is 60% w/v. The samples are kept at 30°C, 40°C, 50°C and 60°C and analyzed for 10 minutes using an analyzer. A. Preparation of the secondary product - 600 g of edible sucrose is dissolved in water to obtain 800 ml of solution, which is then acidified with dilute hydrochloric acid to pH 5.5. The carrier is then treated for 1 hour with 0.05 M magnesium chloride solution, the magnesium chloride solution is decanted, and 0.05 M magnesium chloride solution is added to obtain a final enzyme concentration of 400 units per ml. Enzyme isomerase concentrate is then added to the carrier to obtain a concentration of 495,000 units per liter, the enzyme is then contacted with the carrier for 22-24 hours, and the bound enzyme is then rinsed from the carrier with distilled water. 12. The enzyme deposited on the carrier is placed in a 3 cm x 18 cm glass column, fitted with a jacket and connected by a pump to the reservoir containing the starting product, so that The bed volume was 45 ml. 5 In all isomerization tests, the column temperature was 60°C. The first 100 ml of the resulting syrup is discarded as a non-homogeneous product, and the remaining secondary product, approximately 850 ml, is then passed through the column. After 1 hour, the flow rate is increased to 570 ml/hour and then adjusted by 20 u to maintain a flow rate of 300 ml/hour for the remainder of the run. After all the secondary product has been introduced, the dextrose solution is re-introduced into the column to demonstrate that the isomerase is still active. Table 5 gives the composition of the secondary product reacted and the composition of the final product B. Analysis was performed by high-pressure liquid chromatography. The fructose polymers contained in the secondary product are not transformed during this time and do not affect the dextrose isomerization process. It should be emphasized that in the final product 45% of the monosaccharides are fructose and 55% dextrose.C. Enzymatic hydrolysis. To 100 ml of the product obtained as described in section B, 10 mg of purified invertase 50 obtained from Candida utilis is added. The toluene-protected mixture is left overnight at room temperature, after which a sample of the resulting mixture is removed and analyzed by high-pressure liquid chromatography. The reaction is then continued for 6 days, after which a sample is removed again and analyzed. The results of the analyses are given in Table 6. They show that the fructose content increases primarily, and to a lesser extent the glucose content, while the content of other sugars decreases. In these tests, an invertase preparation manufactured by Siekagaku Kogyo Co., Ltd., Tokyo, Japan, with an activity of 123 units/mg, was used. This activity is defined as the fact that 1 unit of invertase catalyzes the cleavage of 1 micromole of glucose to 1 micromole of fructose in 1 minute under the specified conditions. Examples I and II used a starting product in which the sucrose concentration was not higher than that corresponding to the saturation state. Example III, however, describes a process in which the sucrose concentration in the starting product subjected to the action of fructosyl transferase is higher than that in the saturated state. These tests show that under such conditions a product with an increased DPA content (i.e., fructosylsucrose) is obtained, and less DP4 product and higher polymers are obtained. Under these conditions, a secondary product with a higher dry matter content is obtained than when the process is carried out without the enzyme fructosyl transferase. Furthermore, this example shows that as the dry matter content of the starting product increases, the degree of polymerization of the fructose polymer in the secondary product decreases, so that DP4 and higher polymers are present only in small amounts. These results differ from those obtained when using starting products with a sucrose concentration below saturation, because at these lower concentrations, the main components are DP4 and higher polymers. Example III 200 g of edible sucrose is placed in 0.5-liter jars fitted with closures. Add 50 ml of water to one of the jars and treat this sample as a control. Add the fructosyl transferase enzyme preparation on Celite, as used in Examples I and II, to the remaining jars, but using the amounts given in Table 8. The jars are closed and placed in a shaking water bath at a temperature of 54-55°C. Shake for 24 hours, shaking the jars occasionally by hand. A sample is then taken from each jar into a sealed tube and placed in boiling water to inactivate the enzyme. It is then analyzed by high-pressure liquid chromatography, and the solids content of the solution is determined using the K. Fischer method. The results are given in Table 8, with the total number of fructosyl transferase enzyme units given in column 3, and the abbreviation "NW" indicates that the given component was not detected. It should be emphasized that in this example, the liquid in the control sample crystallized upon cooling to room temperature, whereas the enzymatic solutions of the secondary product produced remained liquid and did not crystallize during magnesium treatment. A secondary product is prepared from edible sucrose in a manner identical to that described in Example 1A, and then the resulting product with a composition as given in Table 4 is subjected to the isomerization process as described in Example 1B, obtaining the product with a composition given in Table 5 (product B). The resulting product is hydrolyzed by the action of 0.05 N sulfuric acid at a temperature of 75-80°C. After 1 and 2 hours, samples of the reaction mixture are taken and analyzed by high-pressure liquid chromatography. The results are given in Table 7. They show that when hydrolysis with acid is used, as in the case of enzymatic hydrolysis described in Example 1, the fructose content increases mainly, while the glucose content increases to a lesser extent and at the same time the content of DP2, DP3 and DP4 and higher polymers decreases, which indicates that these polymers contain fructose. The process of producing sugar products containing more than 50% by weight of fructose, which comprises processing sucrose into a mixture containing dextrose, fructose and polysaccharides and isomerizing the dextrose contained in this mixture into fructose by means of an isomerase enzyme, and then hydrolyzing the polysaccharides in the absence of an isomerase enzyme, characterized in that in the first stage of the process, sucrose is subjected to the action of a new fructosyl transferase enzyme at a temperature of 25-65°C and at a pH of 16. 4.5-6.5, wherein the dextrose contained in the resulting new product, being a mixture of dextrose, fructose and polysaccharides containing at least 66% by weight of fructosyl groups linked by 5(2 μl)-β9 linkages, is converted into fructose by the action of an isomerase enzyme, and the polysaccharides contained in this mixture are subjected to hydrolysis in the absence of the isomerase enzyme. 2.
