Description

Opis wynalazkuDescription of the invention

Przedmiotem wynalazku jest acykliczny alkohol, analog nootkatonu, o zapachu zbliżonym do zapachu naturalnego nootkatonu. The subject of the invention is an acyclic alcohol, an analog of nootcatone, with an odor similar to that of a natural nootcatone.

Nootkaton is the most important aromatic component of grapefruit oil, its scent is described as grapefruit, citrus, sweet with a hint of wood (Perfumer & Flavorist magazine 1990, 15 (3), 51). The synthesis of nootkaton, optically active and identical to the natural one, is extremely complicated and unprofitable in industrial practice. On the other hand, compounds with odor characteristics similar to that of nootcatone are successfully used, such as 4,7-dimethyloct-6-en-3-one, 2,2-dimethyl-4-phenylpentanenitrile (grapefruit nitrile), isobutyl N-methylanthranilate, 2,4,8-trimethylone-7-en-2-ol or also (E, E) -dodeca-2,4-dienal.

Wynalazek dotyczy acyklicznego alkoholu, analogu nootkatonu, który stanowi 5,9-dimetylodec-8-en-2-olu o wzorze:The invention relates to an acyclic alcohol analog of noothcatone which is 5,9-dimethyldec-8-en-2-ol having the formula:

Związek według wynalazku znajduje zastosowanie jako składnik kompozycji zapachowych oraz aromatów spożywczych. The compound of the invention finds use as an ingredient in flavor compositions and food flavorings.

The method of preparing 5,9-dimethyldec-8-en-2-ol is that 4,8-dimethylone-7-enal is subjected to a nucleophilic addition reaction and converted into the desired secondary alcohol, preferably with a Grignard reagent (methylmagnesium halide). . The product is isolated from the reaction medium by extraction.

Przedmiot wynalazku ilustruje poniższy przykład.The following example illustrates the subject of the invention.

W kolbie zabezpieczonej przed dostępem wilgoci umieszczono 31 ml 3M roztworu bromku metylomagnezowego w eterze dietylowym (93,0 mmola). W trakcie mieszania wkroplono 13,0 g (77,4 mmola) 4 ,8-dimetylonon-7-enalu rozpuszczonego w 30 ml tetrahydrofuranu utrzymując temperaturę nie wyższą niż 10°C. Mieszanie kontynuowano przez 2 h. Następnie wkroplono 20 ml wody, a powstały biały galaretowaty osad rozpuszczono dodając 200 ml nasyconego roztworu chlorku amonu. Po uzyskaniu klarownej warstwy organicznej przeniesiono mieszaninę do rozdzielacza i warstwę organiczną oddzielono od wodnej, a tę ostatnią ekstrahowano 3 x 40 ml octanu etylu. Połączone warstwy organiczne przemywano wodą, a następnie solanką do odczynu obojętnego i osuszono bezwodnym siarczanem (VI) magnezu. Odparowano rozpuszczalnik i uzyskano31 ml of a 3M solution of methylmagnesium bromide in diethyl ether (93.0 mmol) were placed in a moisture-proof flask. While stirring, 13.0 g (77.4 mmol) of 4,8-dimethylone-7-enal dissolved in 30 ml of tetrahydrofuran was added dropwise keeping the temperature not higher than 10 ° C. Stirring was continued for 2 h. Then 20 ml of water was added dropwise and the resulting white gelatinous precipitate was dissolved by adding 200 ml of saturated ammonium chloride solution. After a clear organic layer was obtained, the mixture was transferred to a separatory funnel and the organic layer was separated from the aqueous one, the latter was extracted with 3 x 40 ml of ethyl acetate. The combined organic layers were washed with water then brine until neutral and dried with anhydrous magnesium sulfate. The solvent was evaporated and obtained

13,1 g ciekłego, bezbarwnego produktu. Na podstawie danych spektralnych otrzymanego produktu stwierdzono, że stanowił on 5,9-dimetylodec-8-en-2-ol (71,2 mmola), który otrzymano z wydajnością 92% wydajności teoretycznej.13.1 g of a liquid, colorless product. Based on the spectral data of the obtained product, it was found to be 5,9-dimethyldec-8-en-2-ol (71.2 mmol), which was obtained in 92% of theory.
