Stewia (Stevia rebaudiana) jest niewielkim, wieloletnim krzewem należącym do rodziny Astrowatych. Roślina ta została odkryta po raz pierwszy w 1887 roku przez M.S. Bertoniego. Pochodzi z regionu Amambay, leżącego w północno-wschodniej części Paragwaju. Występuje także w sąsiedniej Brazylii oraz Argentynie, jednak jej uprawa rozprzestrzeniła się w inne regiony świata m.in. na Kanadę, Azję oraz Europę. Wyróżnia się ponad 200 gatunków tej rośliny, która nie jest wymagająca i może być uprawiana nawet w ogrodzie. Aktualny stan wiedzy potwierdza, że Stevia rebaudiana jest jedynym gatunkiem rośliny, która posiada zdolności słodzące. Liście tej rośliny zawierają w swojej budowie glikozydy, charakteryzujące się słodkim smakiem. Liście dzikich roślin stewii zawierają 0,3% dulkozydu A i C, 0,6% rebaudiozydu C, 3,8% rebaudiozydu A i 9,1% stewiozydu. Glikozydy stewiolowe nie wnoszą do diety wartości kalorycznej, natomiast zawierają białko, węglowodany, błonnik a także witaminy i składniki mineralne. Związki te są do 250-300 razy słodsze, natomiast liście stewii ok. 40 razy słodsze od sacharozy. Niekiedy po spożyciu składników stewii wyczuwalny jest delikatny posmak ziołowy, lukrecjowy lub gorzki.Stevia (Stevia rebaudiana) is a small, perennial shrub belonging to the Asteraceae family.
