Abstract

Przedstawiono rozdrobnione kompozycje zawierające 10% do 90% wagowych materiału matrycowego i 10% do 90% wagowych triglicerydów kwasów tłuszczowych, przy czym w tych triglicerydach ilość H3 (triglicerydów 3 nasyconych kwasów tłuszczowych o 16 albo więcej atomach węgla) i H2U (triglicerydów 2 nasyconych kwasów tłuszczowych o 16 albo więcej atomach węgla i 1 cis-nienasyconego kwasu tłuszczowego) wziętych razem wynosi co najmniej 55% wagowych, liczone na całkowitą ilość triglicerydów, przy czym kompozycje korzystnie zawierają mało triglicerydów trans-nienasyconych kwasów tłuszczowych, do stosowania jako, na przykład śmietanka i/albo zabielacz. Wynalazek dotyczy także sposobu wytwarzania takich rozdrobnionych i żywnościowych produktów zawierających taką śmietankę.
