Abstract
Wynalazek rozwiązuje problemy mechanizacji i automatyzacji produkcji serów twardych blokowych z zastosowaniem tradycyjnej technologii, dla małej skali przerobu. Cylinder (1) jest rozłączny od prostokątnego dna (5) i blisko jego dolnej krawędzi zespolony jest trwale z obrzeżem osiowego otworu górnej ściany, prostokątnej formy (2) serowarskiej, z sitem (3). Ściany boczne ruchomej formy (2) serowarskiej schodzą w dół, poniżej dna (5), do wnętrza rynny (6) z dwiema uszczelkami (7, 8) pneumatycznymi. Cylinder (1) od położenia, gdy leży na dnie (4), do położenia otwarcia dna, poruszany jest pionowo podnośnikiem (10) śrubowym. We wnętrzu cylindra (1) znajduje się, poruszana przez podnośnik (16), przegroda (12), z obudową (14) mieszadła. Pod przegrodą (12) przytwierdzone jest sito (13) i znajduje się osiowy otwór, przez który do wnętrza cylindra (1) wprowadzane jest mieszadło z obracającymi się łopatami (26), wykonującymi ruchy wahliwe. Do skraju wału (22) mieszadła przytwierdzone jest sito (23). Bezpośrednio przy rynnie (6) znajduje się podłużny, otwarty zbiornik (42) solanki posiadający od strony formy (2) ruchomą, zanurzaną w solance ramę (43), z przesuwnymi wspornikami (44), posiadającymi przytwierdzoną trwale tacę (45), wsuwaną pod uniesioną formę (2). Na ramie (43) zainstalowany jest zespół (48) krajaczy podłużnych i krajacz poprzeczny. W zbiorniku (42) solanki zainstalowane jest sito (54) zanurzające i unieruchamiające w solance sery, oraz sito (55) unoszące sery ponad solankę. Urządzenie nadaje się szczególnie do mini serowni przy oborze jako zakończenie linii udojowej mleka i pozwala przerobić na sery twarde mleko natychmiast po zakończeniu doju.The invention solves the problems of mechanization and automation of the production of hard block cheeses using traditional technology for small-scale processing. The cylinder (1) is detachable from the rectangular bottom (5) and close to its lower edge is permanently joined to the periphery of the axial opening of the upper wall, the rectangular form (2) cheese, with the sieve (3). The side walls of the movable cheese mold (2) go down below the bottom (5), into the inside of the gutter (6) with two pneumatic seals (7, 8). The cylinder (1) is moved vertically by a screw jack (10) from the position when it lies on the bottom (4) to the position of the bottom opening. Inside the cylinder (1) there is a baffle (12) moved by the lift (16), with the agitator housing (14). Under the partition (12), a sieve (13) is attached and an axial hole is located through which a mixer with rotating blades (26) is introduced into the cylinder (1), making oscillating movements. A sieve (23) is attached to the edge of the agitator shaft (22). Directly at the gutter (6) there is a longitudinal, open brine tank (42) having from the mold side (2) a movable frame (43) immersed in brine, with sliding brackets (44), having a permanently attached tray (45), slid under raised form (2). A set (48) of longitudinal cutters and a cross cutter are installed on the frame (43). In the brine tank (42) a sieve (54) is installed, immersing and immobilizing the cheese in the brine, and a sieve (55) lifting the cheese above the brine. The device is particularly suitable for mini cheese rooms at the barn as the end of a milking milk line and allows you to process hard milk into milk immediately after milking.
