Abstract

Wysokobłonnikowe produkty granulowane instant charakteryzują się tym, że zawierają błonnik zbożowy poddany wcześniej obróbce hydrodynamicznej w ilości od 15 do 45% wag. Pozostałe składniki produktów stanowią: kaszka kukurydziana 25 - 40% wag., mąka pszenna 10 - 30% wag., inne mąki zbożowe 10 - 35% wag. oraz, ewentualnie, różnego rodzaju dodatki o właściwościach prozdrowotnych lub funkcjonalnych, takie jak: suszone algi, proszek z owoców dzikiej róży, suszona natka pietruszki, itp. Sposób charakteryzuje się tym, że błonnik zbożowy poddaje się wstępnie obróbce hydrotermicznej, po nawilżeniu do wilgotności od 15 do 25% w "warniku", przy ciśnieniu 4 do 6 atm, w czasie 0,5 do 3 godzin, a po schłodzeniu rozdrabnia się go do wielkości poniżej 200 mikrometrów i doprowadza do wilgotności 10 - 15%. Then, the pretreated fiber is fed to the mixer together with 25-40 wt.% Corn porridge, 10-30 wt.% Wheat flour. and other cereal flours in an amount of 10-35 wt. along with other prescription additives. The resulting mixture is moistened with water with a content of 0.5 - 1.5 wt. edible salt to a moisture content of 22-35% by weight, after which the seed is conditioned for 5 to 30 minutes and, in the final stage, it is extruded in a twin-screw extruder at a temperature of 60 - 185 ° C.
