Abstract

Przedmiotem zgłoszenia jest sposób zwiększenia aktywności proteolitycznej w kąpieli pozostałej po marynowaniu śledzi, który charakteryzuje się tym, że kąpiel po usunięciu z niej tłuszczu i zawiesiny poddaje się co najmniej raz powolnemu zamrażaniu oraz rozmrażaniu tak, aby utrzymać chłodniczą temperaturę kąpieli wynoszącą 1-7°C. Korzystnie z kąpieli po zamrażaniu i rozmrażaniu usuwa się bakterie, poddając ją mikrofitracji. Inny sposób, charakteryzuje się tym, że kąpiel po usunięciu z niej tłuszczu i zawiesiny poddaje się działaniu ultradźwięków o niskiej częstotliwości i dużej mocy przez co najmniej 1-5 minut. Korzystnie po działaniu ultradźwiękami kąpiel pozostawia przez co najmniej 1 godzinę w temperaturze chłodniczej wynoszącej 1-7°C. Kolejny sposób charakteryzuje się tym, że kąpiel po usunięciu z niej tłuszczu i zawiesiny poddaje się działaniu homogenizacji mechanicznej przez co najmniej 1 min, lecz nie dłużej niż 2 min, w temperaturze chłodniczej wynoszącej 1-7°C. Inny sposób charakteryzuje się tym, że kąpiel po usunięciu z niej tłuszczu i zawiesiny poddaje się nanofiltracji na filtrach o zdolności rozdzielczej (cut-off) od 1 do 1000 kDa, najkorzystniej nie mniejszej niż 200 kDa lub nie większej niż 10 kDa.The subject of the application is a method of increasing the proteolytic activity in the bath remaining after marinating herring, which is characterized by the fact that after removing fat and suspension from it, it is subjected to slow freezing and thawing at least once so as to maintain a cooling bath temperature of 1-7 ° C . Preferably, bacteria are removed from the bath after freezing and thawing, subjecting it to microfiltration. Another method is characterized by the fact that after removing fat and suspension from it, the bath is subjected to low frequency and high power ultrasound for at least 1-5 minutes. Preferably, after ultrasonic treatment, the bath leaves for at least 1 hour at a cooling temperature of 1-7 ° C. Another method is characterized in that the bath, after removing the fat and suspension from it, is subjected to mechanical homogenization for at least 1 min, but not longer than 2 min, at a cooling temperature of 1-7 ° C. Another method is characterized in that the bath, after removing the fat and suspension from it, is nanofiltrated on filters with a cut-off capacity of 1 to 1000 kDa, most preferably not less than 200 kDa or not more than 10 kDa.
